Bill Belichick and Deion Sanders are not in the game, meaning that if you want to play as the North Carolina Tar Heels or the Colorado Buffaloes, you'll have to do without their real-life head coaches.
For what it's worth, Belichick opted not to be a part of the Madden series either. For anyone who has followed Belichick's career dating back to when he was the head coach of the Cleveland Browns (yes, that was a thing that happened in the 1990s), Belichick not wanting to be a part of something "corporate" won't come as a shock, considering his chilly demeanor.

Belichick spent over two decades with the New England Patriots and won six Super Bowls with them while appearing in nine total. The two sides parted ways after back-to-back disappointing seasons in New England, something that franchise isn't used to.
People don't really need a reason from Belichick, but it'll be interesting to hear Sanders' reasoning for not appearing in the new video game.
